Durian ogura cake


Egg yolks – 5

Whole egg – 1

Cake flour – 90g

Durian purée – 100g

Milk – 85 ml

Egg white – 5

Caster sugar – 70g

Cream of tar tar 1/4 tsp


1. Mix egg yolks, whole egg, oil and blended durian purée with milk.

2. Sieve in flour and salt. Fold. Set aside.

3. Make meringue from egg white, sugar and cream of tar tar (optional).

4. Fold in meringue into initial mixture (3 different times).

5. Bake under preheated oven of 170 degree celcius for 1 to 1.5 hours. Lower temperature to 130 degree celcius for another 20 minutes. (Timing and temperature very dependent on your oven).
