Carrot and garlic rice for 11m1d

Similar to Noelle, discovered that Nikki prefers whole grains than porridge! 😅
Gave her a little carrot and garlic rice with radish (from our soup of the day); at least willing to try and picked grain by grain! <video>

Recipe: stir fry garlic and carrot in oil until fragrant. Then add into soaked basmati rice and water. Cook in rice cooker.

We had the same rice for dinner!

Sharing between young siblings

They were both ‘fighting’ over the motorbike the whole day with Noelle refusing to let Nikki have it! 😪
Well, Noelle has the ‘right’ not to share/ take turn because it belongs to her. At the same time, I cannot ask Noelle to give in just because Nikki was crying – as Noelle will use back the same crying tactic on us. Distracting Nikki wasn’t easy too (as usual she will want what Noelle has🙄). What a dilemma! I even indirectly told Nikki that I will get her new toys since Noelle isn’t sharing with her – Noelle didn’t bother me!🙄
At one point, Noelle started telling me ‘mama, I don’t want Mei Mei 😒!’ And I was 😨😨 and then told her ‘ok, I will send Mei Mei to Aunty’s house’. 🙄Noelle then nodded. I didn’t bother her.

Just before nap time, Noelle came telling me ‘mama, I dun wan Mei Mei go’. At first, I was thinking ‘what’ and then reflected on what we were talking earlier. So I knew what she meant.
So after all, Noelle wanted Nikki to ‘stay’. After nap time, Noelle even started to ‘take turn’ with Nikki to go on the bike (though Noelle still shows her possessiveness).
I guess the point is not to force them into ‘sharing’ but just let it take its pace!

Eggless buns for 11mo

Ingredients: Half cup water + 1 tsp instant  yeast + 0.5 tsp molasses sugar (sugar required to activate yeast); 1.5 cups of bread flour; 1 tbsp cake flour; 1 tbsp unsalted butter

I kneaded everything with hand before putting it into breadmaker under knead mode. I removed it and let it rest about 30 minutes. Then divide into smaller doughs.

And let it rest for another 20-30 minutes. Brushed it with extra virgin coconut oil before sending it to preheated oven of 170 degree celcius.

It came out quite ‘spongy’

And the baby enjoys it!

Today the 11mo also tried yogurt, the baby led weaning way – Popsicle frozen yogurt (Farmers union Greek style natural yogurt).

Review: Pelagos lemon and herbs shrimp

Lazy Monday – so just cook one dish for lunch
Stir fry garlic, ginger and carrot in heated butter. Add in the defrosted shrimps. Stir for a minute or two before adding the seasoning plus water.
I found it a little too sweet so adjusted it with a little more water than the suggested amount.
When opening the seasoning pack, it did smells a little artificial (like eno 😂) but after cooking, tasted fine.
Will be serving it with yesterday’s leftover garlic rice!

The easiest way to white chicken

Lazy chicken rice
Found the easiest way to cook a whole chicken – boil water enough to cover the chicken (without putting chicken yet) – add in garlic, galangal and ginger. Once boiled, add in the whole chicken – like it boil under high heat for 7 minutes. Off fire and leave it in the pot for 2-3 hours! Remove and rub with sesame oil! Cool down and chop!

Rice is the normal garlic oil, pandan leaves and ginger with basmati rice in rice cooker!

Noelle’s music class 261116

Everyone else was ‘on holiday’! 😂 So we have Noelle and Zen Bin only in the class! Zen Kit was with them for a moment until Noelle made him cry! 😪Leaving two kids only, less ‘chance’ of squabbling! So today more or less a smooth running class! It was like a play date with a teacher around! 😂And there were many funny moments between the two.
