Crispy salted egg bitter gourd


Sort of got it! Forgotten the curry leaves actually!

Blanched bitter gourd and set aside.

Mix steamed salted egg yolk (steam for 5 minutes), one egg, some cornflour, pepper and pinch of seasalt. Then add in blanched bitter gourd. Pan fried it like omelette but separate the sliced bitter gourd. Throw into air fryer. At 160 degree celcius, air fry for 15-20 minutes depending on crisp level you want!


She tried the egg part and gave me thumbs up!
