Dinner tonight: Nasi lemak ayam goreng
Chicken was air fried and rice is virgin coconut oil rice.
Recipe for air fried chicken:
I marinated the chicken with orange juice (fresh orange) + pepper + liquid amino (you can replace with soy sauce) for 2 hours.
Then coat them in egg white.
Then coat them in plain flour + corn flour + pinch of seasalt + pinch of baking powder
Then brush with oil, all sides of the chicken.
Air fried under 170 degree celcius for 8 minutes. Then flip and air fried for another 8 minutes.
I found that going lower temperature and longer time, can prevent under cooked!
Quickie sambal onion taught by a friend using chilli bowl.
1. Sauté onion and ikan bilis in oil until almost done.
2. Add in chilli bowl, brown sugar and some water (depending on the level of consistency you want).
3. Let it simmer for a moment. Done.
Add lime juice if you want.
Mostly leftovers for lunch
