Confinement meal 6

Confinement breakfast:

Honey and dates oats + milo toast (sorry ate half before taking pic, as nursing my baby) + milo drink + red dates drink

PPC soy sauce pork trotter with shiitake mushrooms

It is the 8th day after I deliver my baby! Lol! And with PPC, I still can cook!

Confinement lunch today: Pressure cooker soy sauce pork trotter with shiitake mushrooms in egg noodles and blanched sawi

Ingredients:
Pig trotter
Soy sauce
Sesame oil
Caramel sauce
Cinnamon stick
Garlic
Star anise
Cloves
Water
Shiitake mushrooms
(Add egg in shell if you want hardboiled egg)

Using Phillips pressure cooker, under ‘beans/tendon’ mode! Done in 30 minutes or so.

My big girl’s lunch: Egg noodles with threadfin fish and mixed vegetables

In leftover slow cooked lotus root and soy beans chicken soup; mixed vegetables – zucchini, celery, mushroom and corns; threadfin fish marinated in liquid amino and pepper

Confinement dinner today:

1. Steamed chicken with black fungus, mixed vegetables and Brands Chicken essence

Thanks to Quinnie Tan for the Brands chicken essence and her suggestion on what to do with it. Pretty simple, yet healthy meal.

Ingredients:
Half chicken
Carrots
Sweet corn
Zucchini
Black fungus
Brands chicken essence (I used two bottles)

Steamed for half hour

2. Stir fry bok choy

3. I only have one small bowl of slow cooker lotus root and soy beans chicken soup left. So, it was for myself.

4. Mixed grains rice

 My immediate challenge just now was preparing the dinner when the big girl says she was hungry and at the same time the baby is crying for milk. At the same time, hubby was having con call. So carried the crying baby while taking the big girl’s portion of food. Then have the girl seated eating (though for not long) and then nurse the baby.

The big girl was really hungry, asked for more rice.
