Confinement lunch today: Pressure cooker soy sauce pork trotter with shiitake mushrooms in egg noodles and blanched sawi
(Add egg in shell if you want hardboiled egg)
Using Phillips pressure cooker, under ‘beans/tendon’ mode! Done in 30 minutes or so.
My big girl’s lunch: Egg noodles with threadfin fish and mixed vegetables
In leftover slow cooked lotus root and soy beans chicken soup; mixed vegetables – zucchini, celery, mushroom and corns; threadfin fish marinated in liquid amino and pepper
Confinement dinner today:
1. Steamed chicken with black fungus, mixed vegetables and Brands Chicken essence
Thanks to Quinnie Tan for the Brands chicken essence and her suggestion on what to do with it. Pretty simple, yet healthy meal.
Brands chicken essence (I used two bottles)
Steamed for half hour
2. Stir fry bok choy
3. I only have one small bowl of slow cooker lotus root and soy beans chicken soup left. So, it was for myself.
4. Mixed grains rice
The big girl was really hungry, asked for more rice.
