Pressure cooker bitter guord chicken with black beans

Ingredients:

One bitter guord, cut and soaked in salt water

Half chicken marinated in soy sauce, oyster sauce, sesame oil, dark caramel sauce and pepper (for an hour)

One bowl of soup

Garlic

Oil

One tbsp black bean sauce + One tbsp fermented bean sauce

Cornflour water

 

Using Phillips Pressure cooker, on bake mode, add in oil. Stir in garlic until fragrant. Add in black bean and fermented bean sauces. Stir and let it simmer for a minute. Then add in bitter guord (without the salt water). Stir and let it simmer for 2 minutes. Add in marinated chicken and the soup. Cover and seal the cover. Change to “chicken” mode (15 minutes). Once done, release pressure and stir in cornflour water. Cover for a moment and then scoop out (I didn’t want the chicken to be overcooked)

The return of my Phillips pressure cooker! I didn’t abandon it for the air fryer. But its inner pot got dented when I accidentally dropped it on floor two weeks ago. And I had to order a new inner pot, which took two weeks to arrive (and I have to collect from their service centre  in Jalan Kilang, PJ (near Campbell factory) – my car was finally repaired last weekend). Plus GST, it is RM84 for the inner pot for my gold PPC!Anyway, it came back on time and I have my kitchen electric equipments all ready before the ‘big’ day! Yeah!

This will be one dish dinner with old cucumber soup. I will blanch some red spinach in the soup. Done!
