Our rather bland lunch today

Air fryer fish

Fish was coated with curry powder, turmeric powder, cornflour and pepper

Using Bayers air fryer, under 180 degree celcius, air fried 8-10 minutes, turning it over once.

We had plain mee hoon kueh in slow cooker radish and tomatoes chicken soup.

Hubby’s lunch box tomorrow

Air fried chicken ribs

Chicken ribs marinated in:
Oyster sauce
Soy sauce
White pepper powder
Corn flour

For 3-4 hours. Air fried under 180 degree celcius for 8 minutes. Then flip. Increase temperature to 200 degree celcius, air fried for 4 minutes. (no drip of oil at all)

Side: Nai pak in radish soup plus shiitake mushrooms

Supposed to be a rest day but seems like I have been busy since morning. Finally knocked off with my girl after our afternoon bath. Didn’t plan much for dinner as we are having leftovers.

1. Yesterday’s leftover air fryer kam heong pork – I just pan frying it with additional onion, dried shrimp, dark caramel sauce, water and corn flour water – let the pork simmer in the sauce before adding spring onions.

2. Leftover braised yam in black fungus – added more black fungus

3. Stew egg tofu with mushrooms (this is freshly cooked)

We will also be having spinach in slow cooker radish and tomatoes chicken soup.

Fatty cheese sticks!

Following papa Zac Ng ‘s recipe on soft bun, translated by mama Rachel Tham. I rolled into sticks and topped with shredded mozzarella stick.

Bread recipe (remembering by hard):
300g bread flour
30g (brown) sugar
3g yeast
3g seasalt
100g yogurt
30g unsalted butter
60g low fat milk
1 egg

Knead by breadmaker. Divide into 11 dough (one taken by my girl to play). Then roll, topped with cheese and egg. Rest for an hour. Baked under preheated oven of 170 degree celcius for 30 minutes.

Pork marinated in:
Curry powder
Dark caramel sauce
Soy sauce
Egg
White pepper powder
Corn flour
Dried shrimp
Curry leaves
Shallots
Dried chilies

Using Bayers air fryer, under 200 degree celcius, air fried for 15-20 minutes, stirring occasionally.

Sides: Stir fry sweet potato leaves with dried shrimp and leftover slow cooker arrow root, apples and peanuts chicken soup

I fried an egg for my girl, and there’s tendency she wants noodles for dinner.. So will cook egg noodles with the soup!

Usually I cook dinner before napping, but this time I do it after napping – since I calculated time that it permits! Dinner in 20 minutes (exclude preparation time). “Magic” of air fryer.

**So sad I am not an ambassador – how many people ‘died’ in my hands – getting an air fryer since I got mine on Tuesday? Haha…

Prepared by apprentice chef papa, who reacted with ‘so plain?’ when mama briefed him what to prepare.

Yes, she can still eat so ‘plain’ food even at 35mo. She enjoys the natural flavouring from food. No harm to do so! And so much easier to prepare.

Air fryer siew yoke!

My best ever siew yoke! Even better than the oven’s!

Using my Bayers air fryer of course!

After I bought the pork, cleaned it. Then blanched in hot water. Make cuts on the meat part and poke on the skin part. Rub with five spiced powder, seasalt and white pepper powder. I left it overnight in the fridge.

In the morning, I cut into half – because couldn’t fit entirely in the Bayers air fryer this slightly more than a kg pork (so I made two rounds). Coat with seasalt on the skin part and air fried for 15 min under 185 degree celcius (I actually put the aluminium foil on the net to prevent stickinh).

Then, removed the salt layer and transfer the aluminium foil to below the net. Now, increased temperature to 200 degree celcius, air fried for 30 minutes.

Cool down before cutting it. I learnt to. Cut the meat part before going into the crispy skin!

Made chilli sauce – blend red chilli, spring onion, garlic and ginger – then add in Brown sugar, seasalt, distilled white vinegar and sesame oil

Girl wants noodles, so just added into the soup for her.

Had the air fryer siew yoke from lunch. Realised that the meat dries up a little after I air fried it again for 3-4 minutes under 180 degree celcius, but the skin still crisp (decided to air fry it again because the skin wasn’t that crispy after going 8 hours +)

Dinner done!

Thanks to Chuah Swan Lee for the recipe. I modified it. I used half skinless chicken for this and marinated with:
Curry powder
Cumin powder
Turmeric powder
Seasalt
Liquid amino
Pepper
Molasses sugar
Curry leaves

*marinate for at least one hour

Using Bayers air fryer, under 160 degree celcius, air fried for 8 minutes and then turn the chicken, air fried for 4 minutes under 180 degree celcius. Since I used chicken with bones and fear it is not cooked inside, I turned the chicken around again and air fried for another 2 minutes under 180 degree celcius.

*air frying this use less time than ‘entertaining’ my girl – who wants water, blueberry, change cartoon…etc…. Zzzz (cos by the time I am done with her, it was ready!)

We are having stir fry French beans with carrot and double boiled old cucumber chicken soup.

Air fried the mee suah

Cantonese styled mee suah

I air fried the mee suah! Blanched in hot water for few seconds. Then transfer to air fryer, under 160 degree celcius, air fried for 8 minutes. Flipping it over from time to time. (it did stuck on the net but easily removed once ‘fried’).

Sauce: Garlic, carrot, mushroom, bowl of soup (I used double boiled old cucumber chicken soup), egg and corn flour water. (didn’t put any seasoning)

Fuss free meal today, she finished the whole plate though I fed her almost entire meal!
