Hainanese styled pork chop and stir fry spinach for dinner

Hubby says he’s going to come home for dinner tonight, so cooked some ho liao meaty stuff for him.

Hainanese styled pork chop:
Lean pork marinated in apple cider vinegar, kikkoman light soy sauce, pepper and corn flour for 4 hours

The marinated meat is then coated by egg and tapioca starch (run out of cornflour); and then pan fried. Set aside.

Sauce: stir fry onion in oil. Then add in diced zucchini, apple and tomato. Stir for 2 minutes. Add in some soup stock and the remainder marinate of the pork (including the egg and tapioca starch). Let it come to a simmer. Add one tbsp tomato ketchup, 1/2 tbsp brown sugar and 1 tbsp liquid amino. Let it boil for 5 minutes before adding 1 tbsp oats to thicken sauce. Add in the fried pork chops. Done!
