Ingredients for braised tomato chicken:
Rice bran oil
Vegetables – celery, carrot, leek (diced)
Shitake mushrooms (diced)
Puree fresh tomatoes
Liquid amino acid (can replace with soy sauce)
Chicken marinated in seasalt and pepper (I used two drumsticks and a piece of chicken breast cut into half)
Stir fry garlic, ginger and onion in oil until fragrant. Put in vegetables and mushrooms. Stir and pour in pureed tomato and leftover soup. Let it come to boil. Add in marinated chicken. Let it braise until cooked. Add in oats and let it simmer. Done!
Served with spaghetti and blanched cauliflower.
I used some of the sauce for my earlier mini pizzas.
