Steamed Spanish Mackerel in mixed vegetables
– one piece Spanish Mackerel
– shiitake mushroom
– water chestnut
Steam in double boiler under steam mode for 15 minutes
Purple carrot rice
– half purple carrot, shredded
– one bulb garlic, chopped
– some curry leaves
– 2 and half cups of white grain rice, soaked (cooking for dinner too)
– olive oil
Browned ingredients before adding water and cook in rice cooker
The little girl ate with much approval. Initially, I gave her half piece of fish, but she wanted more of the fish plus rice.
Fortunately, I have leftover curry fish which I added more tamarin juice, curry powder, tau pok and cabbage, to serve with purple carrot rice.
