We are heading North for 3 Days 2 Nights!

I showed my friend this picture and she was amazed – in fact said – I packed more food than clothes, though it is just a Cuti-cuti Malaysia trip. Well, since we are going on car – we have our space! LOL!

What do I have in mind:

First day:

  1. Breakfast would be Yoplait blueberry yogurt
  2. Lunch, which I will cook in the morning – steamed leek, corn and buna shimeji mushroom
  3. Teatime would be Yoplait blueberry yogurt, papaya, honeydew
  4. Dinner, which I will cook upon arrival – macaroni and soup – corn, carrot, tomato, celery

Second day:

  1. Yogurt (which I will buy the night upon arrival at our destination) and Massimo bread
  2. Lunch – rice cooker rice – buna shimeji mushroom, celery, tomato, carrot
  3. Teatime would be Yogurt (which I will buy the night upon arrival at our destination)
  4. Dinner – macaroni and soup – leek, Chinese cabbage, celery, water chestnut

Third day:

  1. Yogurt (which I will buy the night upon arrival at our destination) and Massimo bread
  2. Lunch – rice cooker rice – buna shimeji mushroom, Chinese cabbage, tomato, carrot
  3. Teatime would be Yogurt (which I will buy the night upon arrival at our destination)

I have a lot of snacks to keep her entertain during our journey drive to and from:

  1. Raisins
  2. Homemade seaweed spring rolls
  3. Microwave arrowroot chips
  4. Cocoa yogurt cookies
  5. Piggy cheese cookies
  6. Mini mandarin oranges

Of course, I have my Inayou cooker, food jar (I am bringing only the 350ml one), knife, cutting board, dish washer, cutleries, bowls and etc.

Hopefully all goes as planned!

*Yes, I am still “depriving” my girl from outside food – not just because she has not reached 3 years old; but also because she didn’t ask for it plus she is currently experiencing eczema issue.

Cookie monster for the weekend : Cocoa yogurt cookies

Ingredients used:
100g biscuit flour (you can use plain flour)
50g unsalted butter (anchor)
2 tbsp Farmers Union Greek Style Natural Yogurt
1 tbsp molasses sugar
1 tbsp cocoa powder

Mix until it forms a dough (use hand). Shape using biscuit mold. Then decorate with sesame seeds and rainbow truffles. Bake under preheated oven of 170 degree celcius for 15 – 20 minutes.

*texture – firm outside, soft inside

Stir fry pork with coriander leaves

Dinner tonight:

1. Stir fry pork with coriander leaves
– lean pork marinated in sesame oil, cornflour, pepper and orange juice
– olive oil, garlic, onion, leek, coriander leaves

2. Stir fry fuzzy melon with tong fun and dried shrimp

3. Bergedil

Nasi kukus easy! – half cup grains, water slightly less than half cup, pinch of salt, one tbsp virgin coconut oil, pandan leaves, ginger – steam 15 minutes

Just for myself

Pan fried chicken breast

I cut one chicken breast into fillets and marinated with: kiwi, curry powder, yogurt, celery, garlic, cornflour (all blended) for about 2 hours and then pan fried with rice bran oil.

My girl turns 25 mo today. And we have our usual simple lunch at home.

Steamed sprouted garlic rice: homegrown sprouted garlic, mixed grains rice, homemade soup stock

Stew tofu: Silken tofu, zucchini, tomato, angled gourd, homemade soup stock, garlic, onion, olive oil, cornflour water

*homemade soup stock – any leftover

Dessert: Blueberries

Double radish chicken soup

Today’s one pot soup to be served with noodles:

Self reminder: no egg noodles for my girl!

Ingredients:
Half chicken
4 stalks celery
Bunch of homegrown sprouted garlic
2 tomatoes
1 white radish
1 green radish
1 bulb garlic

Will add romaine lettuce and eat the chicken meat

Served with spaghetti

The girl lost a bit of patience when the session started late. She even started to put on her shoes until she saw Aunty Fi arriving. And she curiously stood in front of Aunty Fi to watch her prepare the session. She is still into wandering around, but obviously lesser than usual. She still likes being the centre of attraction where she stood right in the middle and has to be persuaded to ‘sit down’. Her concentration span could be lengthen if Aunty Fi holds a toy, paper, pen and etc.

She seriously enjoy tidying up so much that she even helped the staff clean up tables after the stamping session. Today’s theme is Pirate play. She had the opportunity to try on the custome but unfortunately she didn’t want to.

Mini meals/snacks today!

Egg less & sugar less honeydew apple muffins for my 24m30d

Recently I learn about an egg replacement chart, which works for my bread. So I thought of trying it on muffins/cupcakes.

Ingredients used:
1 tbsp raw flax seeds + 3 tbsp water (blended, this is to replace egg)
120g self raising flour
30g unsalted butter
1 tbsp milk
1 tbsp yogurt
100g honeydew (blended)
100g apple (blended)

Mix everything (I used a whisk) and pour into baking cups. Under preheated oven of 170 degree celcius, bake for 15 – 20 minutes.

End result – firm, soft and slightly wet (difficult to describe :P)
