Late lunch today: Fussili with tomato minced pork top with Cheddar cheese

Today we had real late lunch since we went Jkids to celebrate my girl’s 17th month old (our outing day without having to bother about groceries). After playing for 2 hours, I direct latched her, gave her some watermelon juice and not long after she slept. So, mummy’s body itching for massage – so I step into the bali massage centre to have one hour foot massage with the toddler lying & sleeping on me! I eventually fell asleep too. LOL! A great break since turning a SAHM four months ago. She woke up right at the dot when the massage ended; i direct latched her once more and let her have one mango walnut muffin plus her Heinz teething biscuit before rushing back home for lunch.

Back to lunch topic: I have prepared this early in the morning.

For the tomato minced pork:
Marinate 400g minced pork with 2 blended tomatoes, half lemon juice, dash of pepper & one tsp dried rosemary (overnight)
2 onions, chopped
1 carrot, blended
3 tomatoes, blended
Olive oil

Steps:
1. Stir fry onions in olive oil until fragrant.
2. Add in minced pork and stir until half cook.
3. Add in blended carrot and tomatoes. Let in stew for 10 minutes and it is done.

*Amount should be enough for 3 adults & 2 toddlers – our lunch & dinner

Cheese – i used Bega extra tasty Cheddar cheese

She was so hungry that she finished all plus asking from me some more!

It’s real cute that my little girl shares with other toddlers. I am so proud of her that she is generally in good behaviour when mingling with others.
